Rework Dispatch as Request

And give it the same Rack::MockRequest API:
request.get(uri, opts)
request.post(uri, opts)
...
request.request(method, uri, opts)
And by default make process an alias of request. Aliasing rather than writing process as request allows process to be overridden easily in subclasses.
